This recipe uses Tasmanian Cassis
Similar in style to the traditional French Crème de Cassis, this delicious, sweet dark red fortified wine is made from 100% Tasmanian Blackcurrants. It has an intense Blackcurrant fruit aroma, the palate is very sweet, rich, smooth and full bodied, with long lingering flavours. It is superb for those who like a very sweet liqueur.
The French use Cassis predominantly as a mix to make “Kir” (White wine and small amount of Cassis) or “Kir Royale” (Champagne and Cassis) as delicious aperitifs. It can be served on ice or exceptional on fine vanilla ice cream dessert. It may also be served as an after-dinner liqueur or as a frappé.
Tasmanian Cassis Fortified Wine contains no preservatives and is available in a range of bottle sizes: 750ml; 375ml; 200ml; 40ml. Once opened, a bottle should be used within three months and kept in the fridge.
