Blue Cheese Mousse

Ingredients

  • 200g King Island Dairy blue cheese
  • 100g cream cheese
  • 1/2 teaspoon anchovy sauce
  • pinch of cayenne pepper
  • 2 tbsp chopped spring onions
  • 15g gelatine
  • 4 tbsp water
  • 175ml mayonnaise
  • 175ml double cream
  • peanuts

Directions

1. Push half of the blue cheese through a seive into a mixing bowl and beat in the cream cheese. Add the anchovy paste, cayenne pepper and spring onions.

2. Dissolve the gelatine in the water and strain into the cheese mixture. Stir well, then stir in the mayonnaise and cream. Chill until set.

3. Spoon onto crispbread or savoury biscuits, add a piece of blue cheese to each serve, spinkle lightly with peanuts.
