Blue Cheese, Sweet Potato and Spinach Frittata

Ingredients

  • 20g butter
  • 1 large red onion, chopped
  • 500g or 2 medium sweet potatoes, peeled and diced
  • 150g baby spinach leaves
  • 100g King Island Dairy Bass Strait Blue, crumbled
  • 7 eggs, lightly beaten
  • 1/3 cup King Island Dairy Créme Fraiche or Pure Cream
  • freshly ground black pepper, to taste
  • green salad to serve

Diretions

1. Melt butter in a non-stick 26cm frying pan. Add onions and potatoes. Cook, covered, over a medium heat for 8-10 minutes, stirring occasionally, until potatoes are just tender.

2. Add spinach and stir until wilted. Top with crumbled King Island Dairy Bass Strait Blue.

3. Combine remaining ingredients and pour over potato mixture. Cover pan with lid or foil and cook over a low heat for 20-25 minutes until frittata is set in the middle.

4. Cut into wedges to serve with a green salad.
